Mammoth Sandwich Island Salsify Seeds 2165 Heirloom Vegetable. The 20 cm (8"") long roots are smooth, thick and slightly tapered. The flesh is a clean white with a flavour much like oyster ""” great for use in stews and soups. Harvest roots from October until soil freezes solid. Flowers are edible and quite good in salads while the young shoots can be eaten like asparagus. Winter hardy to Zone 5 (biennial-variable). Mammoth Sandwich Island has been the favourite salsify since the mid 1860's.

How to Grow

60 seed/gram Culture is similar to carrots. Sow seed in May 12 mm (1/2"") deep in rows 30 cm (12"") apart. Thin to 7.5 cm (3"") after germination. Keep evenly watered through the growing season, as this will ensure good roots and will help to stop ""˜bolting' from occurring during hot, dry conditions.
